🛒 Ingredients

  • 120g chicken breast (skinless, boneless)

  • 70g cooked basmati rice (or swap for quinoa)

  • 75g black beans, drained and rinsed

  • 75g sweetcorn (frozen or canned, drained)

  • 80g mixed peppers, diced

  • 40g red onion, finely chopped

  • ½ tsp olive oil

  • ½ tsp smoked paprika

  • ½ tsp ground cumin

  • ¼ tsp chilli powder (optional)

  • 1 tbsp fresh lime juice

  • 15g light sour cream or 0% Greek yoghurt

  • Fresh coriander, chopped

  • Sea salt & black pepper to taste

🔥 Instructions

  1. Cook the Chicken:

    • Heat a non-stick pan over medium heat and add the olive oil.

    • Season the chicken with paprika, cumin, salt, and pepper.

    • Cook for 8–10 minutes, turning halfway, until golden and fully cooked.

    • Slice into strips.

  2. Sauté the Veggies:

    • In the same pan, add peppers and onion.

    • Cook for 3–4 minutes until softened. Add the black beans and sweetcorn for the final 2 minutes.

  3. Assemble the Bowl:

    • Add rice to your bowl.

    • Top with the veggie mix and sliced chicken.

    • Finish with a drizzle of lime juice, a spoon of Greek yoghurt or sour cream, and a sprinkle of fresh coriander.
